Our Southern Spinach is our take on the classic Spinach. True Spinach is unfortunately not that tolerant of Texas weather, so we grow this as an alternative. An Asian Green called Komatsuna, this dark leafy green has a sweet, peppery flavor. Its flavor is somewhat stronger than true spinach, however, it can be used in much the same ways, either eaten raw or cooked. Our Southern Spinach in fact cooks up better than true spinach due to having a thicker, sturdier leaf and stem, preventing it from getting quite as mushy as true spinach.
